I just had to do it.
I tried to get a good picture of the insides for you, but it was very hard. Especially when I couldn't stop eating the one I was trying to photograph (I actually ended up eating two for these pictures).
Oh well!
Raw Snicker Bars
'Nougat' (bottom layer):
1/2 cup cashews, soaked in water 1 hour
1/4 cup dry cashews
1/4 cup oats
2 tbsp coconut oil
6 dates
scrape of vanilla bean
Blend up the soaked cashews, then add dry cashews and oats. Throw in the coconut oil, dates and vanilla, then blend again until it forms a dough. Place in a bowl and knead with your hands a bit. Take pieces of the dough and shape them into little bars. Refrigerate while you make the other layers.
Peanuts:
1/4 cup raw peanuts - squash these on top of the nougat before caramel
Caramel:
8 dates, soaked in water 1 hour
1/4 cup agave
1 tbsp coconut oil
2 tbsp water
Blend all of this up for five minutes. Non stop. It should get somewhat smooth and a little thick. Then just scoop some of it onto the top of the peanuts and spread it around. I like to use a lot of caramel.
Chocolate:
3 tbsp cacao powder
1 tbsp almond butter
2 tbsp agave
3 tbsp water (or 2 tbsp water, 1 tbsp coconut oil for creamy chocolate)
Mix the agave into the almond butter, then add the water and mix that in too. After those are fully combined, stir in the cacao powder. Coat the bars in the chocolate. And that's it.
You should pop these in the fridge for at least two hours. Or if you're like me and can't wait, in the freezer for just one hour. I also stored these in the freezer because I liked them better when they were firm, and because the chocolate tends to be on the soft side.
I submitted these to Wellness Weekend. Thanks for the tip Ricki!
Uh, YUM. Thanks for sharing your recipe - I've already bookmarked it. :) By the way, I tried the Raw Fig Newton Bars you posted the other day and they were SO good.
ReplyDeleteOh, awesome! I'm glad you liked them :)
ReplyDeleteUmm, YUM! These look delicious. And why is it always so hard to get a photo of the inside? I can never manage to do it.
ReplyDeleteI make a raw pay day bar and just realized I can turn it into a baby ruth by using your chocolate recipe - cannot wait to try this.
Fantastic! I never did bars, these have to be first :D
ReplyDeleteWow, what genius. I'm intrigued and impressed by the idea of raw caramel.
ReplyDeleteO.M.G.!!!! Your creativity is amazing! These look SO delicious and you don't have to feel guilty eating these treats! I can't wait to try these!
ReplyDeleteOh my goodness. Wow.
ReplyDeleteDo you have any idea how much I love you for this? I don't blame you for eating during photographing. Who wouldn't? These look incredible.
ReplyDeleteI've never been able to think of how to make a raw nougat, but this sounds amazing. Great recipe!
ReplyDeleteoh my goodness! raw snickers!! can it get any better?!! you did a great job.

ReplyDeleteThis is awesome! I am going to have to try making these, love that they are raw and somewhat healthful :)!
ReplyDeleteAshlae - I know right? But trying to get a good shot was a great excuse for me to eat two of these. mmm Are Baby Ruth's the same as Snickers? I don't even know..
ReplyDeleteSlyvvia - making bars are pretty fun :)
Rose - thanks! I ended up eating too much of the 'caramel' before putting it on the bars and then I realized I didn't have enough
Sarah - thanks! yeah I don't feel too guilty about eating these. I would if I had eaten more than the two though.
Maud - :)
Alicia - haha, no I have no idea. But I can imagine how much if you love chocolate the way I do.
Evan - thank you!
Celia - thank you! I don't know if it can get any better than these yet..I still need to think up something else to make raw :)
Thanks Angela!

ReplyDeleteHoly wow; I can't wait to try these!
ReplyDeleteThese look so good... definitely bookmarking for later. Maybe for a party or something where I have people to share with, because yeah, this is the sort of thing where I could probably just mow through these things.
ReplyDeleteI love the idea of using dates for caramel! I've seen a few MoFoers mention that and every time I see it I get excited.
OMG!!!! I have to try this, wish I had some right now.
ReplyDeleteAwesome! This is perfect timing - a friend was just gushing about how much she loves snickers, and I admit, I was a wee bit jealous. Not anymore! :)
ReplyDeleteOh yeah, these are most certainly on my "to make" list! They look delectable!
ReplyDeleteWords cannot describe the depth of my awe at your amazingness. I think I'll even have to delay making my third batch of raw brownies this month, in order to get some raw snickers action in my mouth. :D
ReplyDeleteThese look totally, absolutely, entirely amazing! I used to LOVE Snickers Bars! I may just have to try these with almond instead of peanuts just to have a taste of this awesome treat. Drool!! Oh, my, you have to submit this to Wellness Weekend (pretty, pretty please???).
ReplyDeleteGenious! These look wonderful. :)
ReplyDeleteSuper yummy. Sadly I can't eat oats. Really need to find a substitute for oats cause they're popping up all over in really amazingly-looking raw recipes these days.
ReplyDeleteOooh! This is going on the to-make list!
ReplyDeleteCorrinadarling - I know what you mean.. :)
ReplyDeleteLaura - go for ittt!
coldandsleepy - yeah I made sure I had other people around for these. But I must admit, I ate over half of them myself.
K - I wish I had some now too
Kristen - sweet! I used to love Snickers too. I have been seeing them a lot with it been almost Halloween.
Thanks JL!
Hannah - who needs words when there is food involved? haha, sorry to interrupt your raw brownie making event.. :)
Ricki - Thanks! I used to love them too. I was thinking about using almonds too, since I'm not very fond of peanuts, but I opted for making them as close to the real thing as I could.
Janet - Thank you very much!
themommybowl - oh no! You could probably try using dried coconut flakes instead of oats though if you wanted! I would imagine it would work in a similar way
Leslie - mine too! again.. :)
UNREAL. These look awesome!
ReplyDeleteWhy even bother finishing your degree? Just go into business selling these online and you're set for life. I'll be your first customer.
ReplyDeleteThanks Amber!
ReplyDeleteShen - aha, no thanks. I'll stick with my art. And I'd rather not spend my entire life making raw snicker bars for people.. no matter how much I enjoy making food. The recipe is right there for you!
oh my gosh, these look AMAZING!!!
ReplyDeleteJust saw these on Wellness Weekends. Um, hello. Raw Snickers bars?! I wish I'd found this earlier in the day, so I could have made them today! Bookmarked for later this week. Can't wait!

I am bookmarking this recipe. I have to have this! They look better than a snickers. Of course, I can't even remember what it tastes like b/c it was so long ago, but I can tell by the recipe that this one will be better! THANK you for sharing!
ReplyDeleteWowsers! I am definitely going to try making these, thank you so much for sharing your recipe!
ReplyDeleteIt's too much trouble. You make it.
ReplyDeleteOh my! What a beautiful recipe. I snagged the caramel portion of this candybar for a recipe I have been working on (I will ping back to you once it is up). If that portion alone is any indication as to how wonderful these bars are, I have no doubt we will enjoy these over and over.
ReplyDeleteThank you for all of your hard work.
xoxo,
